Produced with the famous method traditonelle, the sparkling wine is left for a minimum of 12 months on the lees before being disgorged.
The Cut Snake Shiraz was thus named because, according to owner Simon, ‘you have to be as mad as a cut snake to grow it!’ Very much a labour of love, Simon and his family have been growing phenomenal varietals out of Geographe Bay for decades. Despite the added effort of producing wines by hand and using these traditional growing techniques, Simon and his family are passionate about creating wines of character.
The Cut Snake Sparkling Shiraz is a particularly good example of this, with the traditional production utilised resulting in a full-bodied WA wine of distinct fruit intensity.
With a ‘single vineyard’ philosophy, all the varietals produced on Moojelup are natural reflections of seasonal vagaries, and this sparkling wine is no exception.
Grown in the foothills of the Darling Scarp near Harvey, the grapes responsible for this delicious varietal flourish in the light, alluvian soils and ideal climate. With the warm summers and cool sea breezes, the wines produced on this vineyard enjoy a great depth in flavour and complexity.
