The base of the Rosè is made from Merlot and was harvested at a moderate potential alcohol when elegant notes were present and the green herbal notes of the variety diminished. Once sixth of this wine is blended from the Saignée of our premium Cabernet Sauvignon parcels picked at a much later date. After the Merlot was picked it was pressed immediately to stainless steel for fermentation. The wine was fermented to dryness and malolactic fermentation was inhibited.
